Chicken Manchurian with Cauliflower Fried Rice

Ingredients

  1. Boneless Chicken - 300 gm (Cut into strips. I prefer Thighs as it has more flavour)

  2. Garlic - 7-8 Cloves - (Finely chopped)

  3. Red Onion - 1 Medium (Peeled and cut into chips like shape)

  4. Green Bell Pepper - 1 Medium (Cut into square chips like shape)

  5. Green Zucchini - 1/2 (Cut into slices)

  6. Carrot - 1 Small (Cut into slices)

  7. Green Chillies - 4-5 (Finely chopped)

  8. Chinese Rice Vinegar - 1 Tbs

  9. Rice Wine - 1/2 Cup

  10. Light Soy Sauce - 3 Tbs

  11. Brown Sugar - 1 Tbs

  12. Hoisin Sauce - 1 Tbs

  13. Sesame Oil - 1 Tsp

  14. Cornflour Slurry - 3 Tbs (Mix 1 Tbs of Cornflour with 2 Tbs of water)

  15. Salt - 4 Tsp

  16. Ground Black Pepper - 3 Tsp

  17. Red Chilli Powder - 1 Tsp

  18. Cauliflower - 1 Large

  19. Bacon Bits - 50 gm (Optional)

  20. Whole Eggs - 2

  21. Cooking Oil - 3-5 Tbs

Method - Chicken Mancunian

Throw the Chicken in a mixing bowl and season it with 1 Tsp of Salt and 1 Tsp of Ground Black Pepper. Keep it aside for 10 minutes. Heat 3 Tbs Oil in a wok and bring it to smoke. Throw the Chicken into the hot oil and fry it until the Chicken is 90% cooked and has become golden brown. Remove the Chicken from Oil and reserve it for later. Throw in the Garlic (Enjoy the fragrance). After 2 minutes, throw in all your veggies (Except green chillies) - Onion, Bell Pepper, Zucchini and Carrot. Fry lightly until the Onion becomes somewhat translucent but not completely. Add some 1 Tsp of Salt and 1/2 Tsp of Ground Black Pepper for seasoning and take the Veggies out and reserve for later. Add Soy Sauce, Hoisin Sauce, Sesame Oil, Brown Sugar, Rice Vinegar and Rice Wine into the Wok in exactly this sequence. Cook for 3-4 minutes. Add one and half cup of Fresh Water. Cook for 3-4 minutes. Add the Cornflower Slurry. Keep stirring. Add the Green Chillies. Cook for another 2 minutes. Toss in the Chicken that has been resting. Toss in the Vegetables that were reserved earlier. Stir everything together. Add 1 Tsp of Salt, 1.5 Tsp of Black Pepper Powder and 1 Tsp of Red Chilli Powder. As soon as the whole thing comes to boil again turn off the heat and let it rest. Chicken Manchurian is done.


Method - Cauliflower Fried Rice


Take the Florets from the Cauliflower and blend them into a Food Processor so that the consistency is similar to that of short rice. Heat a pan and roast Bacon Bits in it. If needed, add some Cooking Oil. Add Cauliflower to the pan. Add 1 Tsp of salt and Mix well while the Cauliflower is still firm. after 3-4 minutes of cooking Cauliflower, make a well in the centre of the pan and add some 1Tbs Cooking Oil. Crack two whole eggs in this and stir to make scrambled eggs. So far Eggs have not mixed with Cauliflower. Once the Eggs have scrambled, give the whole thing a final mix to incorporate everything evenly. Cauliflower Fried Rice is done.
