Smoked Chicken with Beans and Mushrooms in Garlic and Basil Infused Butter

Ingredients

  1. Smoked Chicken Breast

  2. Green Beans

  3. White Mushrooms

  4. Garlic

  5. Fresh Basil

  6. Red Onion

  7. White Wine Vinegar

  8. Cherry Tomatoes

  9. Some Green Leaves (Can be anything) Smoked Chicken with Beans and Mushrooms in Garlic and Basil Infused Butter

Method

Toss the butter into a wide, flat pan. Let the butter melt on slow heat. Do not let the butter brown (Not yet). As soon as the butter is melted and is making the most beautiful sizzling sound, add in the Chopped garlic and the Basil leaves. Let this sizzle. Let the flavours flow from the Garlic and Basil into the butter. This is a slow process, so you need to be patient. Keep the heat on low to maintain that very gentle sizzle. Show some love to your cooking.

After 4-5 minutes of infusing flavours into the butter, add in the beans and tun the heat up to medium. The beans will cool the pan down and you need extra energy to bring the heat back up. Cook the beans to your liked level of doneness. It is recommended that you keep a bit of a crunch left in the bite of the beans. Add salt and pepper. Once that is done, take the beans out and reserve them for plating. Most likely the Basil leaves will stick to the Beans and exit the pan on their own. You won't even have to try.

In the same pan (I know, so convenient right?) add the chopped onions. Cook until the onions are translucent. At this point, the heat will be a little higher and it is ok for the butter to burn a little bit to bring out that nutty flavour. Remember, this butter still has some of the Garlic you added initially (because some must have stuck to the Beans and exited the pan). Also, this Butter has already exchanged flavours with the Beans and the Basil. And now it is doing so with the Onion and the Mushrooms. We are building layers here.

Once the Mushrooms have sweated all their water and have turned golden brown, add the White Wine Vinegar. Now, add the Cherry Tomatoes. Stir and cook for another 2-3 minutes, add in some Salt and Pepper and turn off the heat. Let it rest.

Plating


Lay the beans down. Saving the Tomatoes to the side, lay most of the Mushroom and Onion garnish onto the beans (save just a little for garnishing on top of the Chicken). Lay the sliced Chicken Breast on the top. Use the Greens and the Cherry Tomatoes to play with the composition on your plate. Be creative and have fun with it. Lastly, Pour the remaining Butter in the pan over the Chicken so that it coats most or all of it.
